The Notorious Brownies (By Robin "The Mad Photographer" Moore)
- 1 cup white sugar
- 3/4 cup white flour
- 1/3-1/2 cup cocoa powder (less if you have really high quality cocoa)
- 1/2 tsp. salt
- up to 1 tbsp. instant coffee crystals (or instant espresso, for that real kick-in-the-ass sensation)
- 1/2 cup (1 stick) butter or margarine
- 2 large eggs
- up to 1/3 cup or so of water (just enough to make a decent thick batter)
- 1 tsp. vanilla extract
- up to 1 12-oz. package of chocolate chips (Hershey's makes raspberry chocolate chips, if you can find them...try them mixed 1:1 with regular semi-sweet)
Combine all dry ingredients, add butter and cut in partially. Add eggs, vanilla, and enough water to make a good batter and mix until well blended. Add chocolate chips, spread in a 11" x 8" brownie/biscuit pan or a 9" square pan, sift 1/2 tbsp. of sugar over the top, and bake for about 30 minutes or so at 350 F -- make sure they're just done, as you want these gooey!
You probably could put different kinds of chips, coconut, or whatever in these. Two layers of batter with some raspberry jam in between might work, but I haven't tried it. Good luck, and bon appetit!
